The medlar of Japan, on the other hand, is Eriobotrya Japonica , has yellow fruits with a smooth and somewhat resistant skin, with juicy and sweet-acid flesh; it originates from China and Japan and was introduced to the Mediterranean in the 19th century. Its fruits ripen from April to June. In Italy, it is grown in the warmer regions. Its fruits, which vary in color (from white to orange) and in flavor (from sweet to sour), have not given rise to distinct species.

RECIPES WITH STRAWBERRIES
Medlars are a non-wasteful fruit: in theory, nothing is thrown away, not even the core. Although the seeds cannot be ingested raw, because they are toxic to the human organism, they should not be wasted, as they allow you to make a tasty loquat liqueur , with a flavor similar to amaretto. To prepare it you need:
- 250 gr of medlar seeds
- Half a liter of water
- Half a liter of alcohol at 90 °
- 500 gr of brown sugar
- PREPARATION
The seeds must be dried for two days in order to remove the brown skin that covers them. The sugar should be dissolved in boiling water and cooled. The mixture of water and sugar is then placed in an airtight jar, with the seeds roughly broken and alcohol. The liqueur must rest for a month and be shaken once a day. You will then have to filter and let it rest for another month before consuming it.
