INGREDIENTS
-FOR THE BASE
-300g of oatmeal
-150ml (1/2 glass approximately) of milk, which you usually use normally
-1 pinch of salt
-Sweetener or stevia to taste
FOR THE FILLING
-250g of beaten cheese
-150g of Whey Protein or Caseinate Amix, vanilla flavor or strawberry
-Mascarpone cheese aroma
-250ml of water or milk
-1 pack of gelatin powder or 6 sheets of neutral gelatin
-Sweetener or stevia to taste
FOR TOPPING
-Jam of blueberries or raspberries
PREPARATION
PREPARATION OF THE BASE
We preheat the oven to 200ºC.
IN A GLASS BOWL …
Heat the milk with a pinch of salt and sweetener in the microwave, until the foam comes out, almost boiling.
IN THE SAME BOWL …
We add the oatmeal little by little, moving with our fingers. If you see that it is too liquid, add
a little more flour. If, on the other hand, there is enough flour, pour a little more milk (with care).
WITH A ROLLER …
When we have a homogeneous and manageable dough, we make a ball with it and knead it with a roll to get the desired thickness.
THEN…
We put the base in a mold and place well, pressing with the tips of the fingers. It is advisable to use a silicone mold to then be able to get the whole cake well easily.
IN THE OVEN…
We bake the base for about 20 minutes, approximately. We monitor that it does not burn, but that it remains toasted so that it crunches.
FILLING PREPARATION
While we have the base in the oven, we will prepare the filling.
IN A SAUCEPAN…
Mix all the ingredients of the filling, except gelatin. At low heat, stir well and mix everything, so that there is a uniform mixture.
WHEN THE MIXTURE IS HOT, BUT NOT BOILING …
Pour the envelope of gelatin or the already hydrated sheets, whatever you have used. Stir well and turn off the heat, let rest a little.
TO END
We take out the base of the oven and let it cool to room temperature.
WITHOUT REMOVING THE CAKE FROM THE MOLD …
We place the filling mixture inside. We leave the cake to rest in the refrigerator, at least for 2 hours, before putting the jam topping.
AFTER THE TIME …
When the filling is already thick and thick, we can put the jam on top. To make it perfect, we can heat the jam in the microwave before putting it on top. It will become more uniform once it is cooled again on the cake.
